So naturally, being who I am, I had to find a way to level up my brownie game with this delicious, from-scratch cosmic brownie pie.
Welcome to the last part of May! Ok, I’m a little late, but life has been crazy. I actually had to start writing everything down in an actual calendar like a little old lady. I’m kidding, but I never needed a calendar before this. When I say May is busy, I mean it!
This month has been particularly busy with my sweet daughter graduating Kindergarten and all the extra-curricular activities wrapping up. I can’t believe my baby will be a first grader in the fall! Dance is ending and her recital is next week. I’m looking forward to a few months of a less hectic schedule and lifestyle. What I always say is that I’m not cut out for a busy lifestyle! I love having no plans!
I feel like I don’t need to go into a whole lot of crazy detail about this recipe, guys. Chocolate recipes are delicious. Brownies are delicious. Pies are delicious. Sprinkles are fun. What more can I say? The flakey and buttery pie crust makes this pie extra decadent along with the sweet and fudgy brownie filling.

Cosmic Brownie Pie
Ingredients
- 1 9- inch pie crust unbaked
- 1 cup granulated sugar
- ½ cup butter melted
- 3 large eggs
- 2 teaspoons vanilla extract
- ½ cup all-purpose flour
- ¼ cup unsweetened cocoa powdered
- 1 ¼ cups semi-sweet chocolate chips divided
- Candy coated mini chocolate chips for garnish
Chocolate Ganache
- 1 cup semi sweet chocolate chips
- ½ cup heavy whipping cream
Instructions
- Preheat oven to 350F. Place the pie crust into a 9-inch pie plate and crimp/flute the crust; set aside.
- In a large mixing bowl, whisk together the sugar, melted butter, eggs, and vanilla until smooth.
- Add the flour and cocoa powder and mix until combined.
- Fold in 1 cup of the chocolate chips.
- Scoop the batter into the prepared pie crust and sprinkle the top with the remaining ¼ cup of chocolate chips.
- Bake the pie at 350F for 40-45 minutes.
- Cool the brownie pie for at least 30 minutes before adding the ganache.
- To make the chocolate ganache, pour 1 cup of semi-sweet chocolate chips and the heavy whipping cream into a microwave-safe bowl and heat in the microwave on high for 30 seconds. Stir well, then continue to microwave in 15 second intervals, stirring between each heating interval until the chocolate is fully melted and the ganache is smooth and creamy.
- Pour the chocolate ganache over top of the cooled pie and spread out evenly. Sprinkle with candy coated chocolate chips.
