Happy birthday to my hubby today!  He is well on his way to the big 4-0 (just kidding, just kidding).  I spent the day making him breakfast before work and his favorite dinner for when he came home from work.  Also, I made a delicious layered cake in between meals for the family party tonight.  All of that cooking and baking can really wear a girl out.


This dinner, guys.


Rustic Chicken with Garlic Gravy, to be exact.  Do you have a garlic lover in your life?  If so, you need to make this for them ASAP.  In my case, the garlic lover is ME.  The more garlic, the better.  I don’t think you can possibly pack more garlic into this meal and that’s exactly why I love it.  Twenty cloves of garlic, people!

The chicken was skin-on and that caused it be cook up very moist and delicious.  The garlic and spices made it smell heavenly while cooking and served over pasta this becomes the perfect comfort meal.  I saved the best for last – this is all made in ONE pan.  That means you don’t have 845893929 dishes to wash after you stuff yourself into a food coma.  Win/win.  Oh, and if you love one pot chicken meals, be sure to check out this Lemon Butter Chicken or this Chicken and Mushrooms with Balsamic Cream Sauce.

Rustic Chicken with Garlic Gravy

Rustic Chicken with Garlic Gravy is a southern chicken dish with made in one pan with a rich, buttery, garlic gravy. Garlic lovers will go crazy for this recipe!
  • 2 Tbsp. cooking oil
  • 6-8 chicken thighs, breasts, etc, skin on, preferably
  • Salt and freshly-ground black pepper
  • 20-22 cloves of garlic (2 full heads), separated and peeled
  • 2 Tbsp. flour
  • ¾ cup dry white wine
  • 1 cup chicken broth
  • 1¼ tsp. fresh thyme leaves (or about ¾ tsp. dried leaves)
  • 2 Tbsp. butter
  1. Heat the oven to 400° F with rack in center of oven.
  2. In a oven-safe Dutch oven or big, oven-safe skillet with a lid, heat the oil over medium high heat.
  3. Dry the chicken pieces well by patting them with a paper towel. Sprinkle the chicken pieces with a bit of salt and the pepper. Cook the chicken until well browned, turning regularly, for about 8 minutes in all then remove chicken to a plate.
  4. Reduce the heat to medium, add the garlic, and cook, stirring regularly, until it is starting to brown, about 3 minutes. Sprinkle the flour over the garlic and stir until combined. Return the chicken to the pot, cover, and bake for 15 minutes in the pre-heated 400° oven. (If you pot or skillet doesn't have a lid, you can tightly cover the top with heavy duty tin-foil instead.)
  5. Remove the pot from the oven and put it on a burner. Be careful not to touch the hot pot!
  6. Remove the chicken pieces from the pot to a clean plate.
  7. Over medium-high heat, whisk in the wine and simmer for 1 minute. Whisk in the broth, thyme and a bit more salt and pepper, then reduce heat and simmer, stirring regularly, until sauce thickens. Turn the heat off and stir in the butter. Taste sauce and add more salt and pepper, if it needs it.
  8. Add the chicken back to the pot to re-warm with the sauce. Serve spooned over mashed potatoes, rice or pasta.
