Pumpkin Spice Cookie Cups
These peanut butter Pumpkin Spice Cookie Cups are super fun with pumpkin spice Hershey’s Kisses added to them. Perfect dessert for Thanksgiving, Halloween, Christmas or just because!
Happy official start of fall. Even though you’ve been seeing pumpkin, Pumpkin Spice Cookie Cups, and apple recipes galore for about a month now!
It sure doesn’t feel like fall here this week. This week’s weather looks better than 3/4 of our summer was. Ha! And no doubt I’m going to savor every last drop of summer weather that I can get.
Nothing says fall flavor like Pumpkin Spice Hershey’s Kisses candies! Their beautiful brown and orange foils make them a perfect addition to Halloween parties and harvest-themed candy dishes. They are every bit as good as you may think and they were the perfect addition to these mini Pumpkin Spice Cookie Cups.
Are you a fan of pumpkin-flavored desserts? Full disclosure: I never really liked pumpkin until just this past year.
I just decided I didn’t like it and so I always passed on pumpkin desserts of any kind. Then I slowly realized I did like it somewhat….a little bit more than somewhat. It just has to be in the right kind of dessert.
I still can’t be bothered with pumpkin pie or anything too hard core like that. Maybe someday my taste buds will adapt to that, as well!
These Pumpkin Spice Cookie Cups are the perfect way to use those Pumpkin Spice Hershey’s Kisses and get your peanut butter cookie fix in all at the same time! Kids will love these.
- ½ cup (1 stick) butter, softened
- ½ cup sugar
- ½ cup light brown sugar, packed
- 1 cup smooth peanut butter
- 1 large egg
- 1 tsp. vanilla extract
- 1-1/4 cups bread flour {or all-purpose flour}
- ½ tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. salt
- 24 Pumpkin Spice Hershey's Kisses
- Preheat oven to 350°F.
- Spray 24 mini muffin cups with cooking spray; set aside.
- Beat together butter, sugar, and brown sugar until smooth.
- Add peanut butter and mix just until blended.
- Add egg and vanilla and mix well.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add flour mixture to wet mixture, just until blended.
- Roll out your cookie dough into balls. {The size of each ball will depend on how big you want your cookie cups. I did about 1-inch ones}
- Place one ball into each of the 24 muffin cups.
- Bake for 12-15 minutes, or until lightly golden. Unwrap Hershey's Kisses while cookies are baking.
- Immediately press one pumpkin spice Hershey's Kiss into the center of each cookie cup. Allow to cool about 5 minutes, remove cookies from pan and let cool completely on rack.

We didn’t get any “Fall Weather” until Tuesday and then BAM it was cold. So weird! Sunday it was hot as hell and Tuesday I was freezing! I love pumpkin pie but didn’t love it until like 4 years ago lol.

I just found pumpkin spice baking chips. I’m so excited to use them. The thing with liking/not liking pumpkin is, it doesn’t taste like much. It’s more the spices we all like. The cookie cups are gorgeous as usual!
