Why, hello gorgeous little cubes of fudge! I think I’ll go ahead and dive right into this secret ingredient fudge, if you don’t mind.
So, you know… every year around Christmas I tell you some story about how I really don’t like fudge. I then proceed to give you a recipe or two or three for fudge (like Creamy Chocolate Holiday Fudge). Why change things now, right? Maybe I’m just really, really hungry or something but I’m all about the fudge recipes.
Do you love fudge so much you could marry it? Well, I never used to feel that way. I don’t really love fudge unless I’m in certain situations, but I love this one. Maybe it’s because it’s just super, super creamy and you can totally make it nut-free since nuts if you want to.
I’m a believer that 9 times out of 10, nuts only belong in those little glass bowls sitting on grandparents’ end tables in the same exact spot every time you visit.
This secret ingredient fudge is a made with an ingredient that might leave you wondering and questioning everything you know. It is made with Velveeta cheese! Don’t knock it until you try it – I promise.
The secret ingredient of Velveeta as the surprising secret ingredient might just gross you out a little, but don’t worry, you can’t taste it. The cheese is there to give it the texture and creaminess that is perfection. Trust me, nobody knew it was there, I promise! BOOM! I’ll take seven pieces right now, please. I am now a believer.
This secret ingredient fudge is so chocolatey, sweet, spongy and fluffy. It’s hard to describe fudge, but there you have it. Once again, let me reiterate that you can’t detect the Velveeta cheese at all (trust me, I’m not a huge fan of this particular cheese, and it is thankfully overpowered by the sweet chocolate and other ingredients). This fudge will fulfill your wildest Christmas dessert-filled dreams.

Tips and tricks:
You can omit the nuts if you like, as I said above.
You can substitute the nuts for any other nuts you like! Walnuts and chopped almonds would work, as well!
Add in ½ teaspoon peppermint extract and omit the nuts for a fabulous peppermint version of this fudge.
You can toast your nuts before adding them for a deeper flavor, but it’s not necessary.
I like to make a little “swirly” pattern on the top of the fudge using a spoon.
Store in an airtight container for up to one week to keep fresh.
You can also wrap it up good in freezer it for up to 2 months!

Secret Ingredient Fudge
Ingredients
- 12 ounces Velveeta cheese cut into cubes
- 1 cup salted butter
- 6 ounces unsweetened chocolate squares broken up
- 32 ounces powdered sugar
- 1-1/2 cups chopped pecans
- 1 teaspoon vanilla
Instructions
- In a medium microwave safe bowl melt together the Velveeta cheese, butter and chocolate in 30 second intervals until all melted.
- Stir until well combined and completely smooth.
- In a large bowl add all your powdered sugar.
- Using an electric mixer add the melted chocolate mixture to the powdered sugar a little at a time until all incorporated.
- Add in the vanilla.
- Once everything is combined just use a spoon to stir in the pecans (if using).
- Line a 9x13 baking dish with foil or parchment and spray with non-stick cooking spray.
- Pour all the fudge into the prepared pan and smooth the top until even.
- Refrigerate for at least 3 hours to firm up.
- Once firm, cut into 1 inch pieces and serve! Enjoy.
