Yeah, I’m sitting here on a 90 degree day typing a post about soup. Everyone normal out there is posting grilling recipes or anything no-bake, but not me! Lasagna soup for the win! I like to keep you on your toes.

I’ll forewarn you that the ingredients list on this recipe for lasagna soup is a little long. The good news is that most of these items can be found in your pantry and this recipe is easy enough to make on even the busiest of weeknights.
Cheesy lasagna soup has become a favorite comfort food recipe in our house. It’s great during the cooler months because it’s warm and indulgent but you can also make it throughout the year when you want something with classic flavors, the tomato, beef, and cheese combo just can’t be beaten, and it’s family friendly.
There are never any complaints in our house when this recipe for lasagna soup is on the table. Everyone from kids to picky adults love this easy recipe. It tastes as it took you all day to make but in truth, it can be on the table in about 30-40 minutes.
Here’s what you will need to make lasagna soup at home:
This list is a little on the long side but most of it you probably already have at home waiting for you. The fresh ingredients are pretty common as well so you might have more than half of this in your refrigerator and pantry already waiting to be turned into the most delicious soup!
- 1 pound Italian sausage, ground
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (15oz) can tomato sauce
- 2 tablespoons tomato paste
- 1 (15oz) can of fire-roasted tomatoes, diced and drained
- ½ cup ricotta cheese
- ½ cup mozzarella cheese, shredded
- ½ teaspoon dried oregano
- ¼ teaspoon red pepper flakes
- 2 cups lasagna noodles, broken into about 2-inch squares
- Salt and pepper to taste
- Fresh basil for garnish

Get ready to have your mind blown. This is a super easy recipe but the flavors are amazing. Everything comes together in one big pot by the end and the smell is mouthwatering. Everyone will be asking when it’s time to eat once this recipe is cooking!
I mean, if you’re more of a traditional lasagna person, I highly recommend my Pesto Lasagna or my husband’s Grandma’s Italian Lasagna.
- In a large pot over medium-high heat add in olive oil, Italian sausage, and onion. Cook until sausage is cooked through and onion is slightly translucent.
- Add in salt, pepper, oregano, red pepper flakes, garlic, and tomato paste. Cook for about 1 minute.
- Add in tomato sauce, fire-roasted tomatoes, and chicken broth. Stir until well combined and bring to a boil.
- Reduce heat to medium-low and simmer, covered, for 20 minutes.
- Bring a separate pan of water to a boil and season water with salt. Cook the lasagna noodles until your desired tenderness. When noodles are done cooking drain and set them aside.
- After 20 minutes remove the cover from the soup pot. Stir in the ricotta cheese.
- Add in your pasta and serve. Garnish with mozzarella cheese and fresh basil

Can I use an Italian seasoning mix for this cheesy lasagna soup?
If you don’t have all of those dried herbs and spices on hand feel free to substitute some Italian seasoning for this mixture. The pre-mixed varieties are usually full of those same types of ingredients so you’ll be all set. 1-2 Tbsp depending on your tastes will suffice.
Can the noodles be cooked with the soup?
If you really want to make this a one-pot meal you can simmer the noodles in the soup itself instead of cooking them on their own. Here are a few things to consider if you are going to do this:
- Will you finish all of the soup in one sitting? If not, cook the noodles separately and add them on a portion at a time. You can keep the noodles mixed with a bit of olive oil in the refrigerator for leftovers.
- Do you mind waiting an extra 15 minutes? The pasta will take a bit longer to cook in the soup itself. If you have an extra 15 minutes just simmer them right in the broth, add an extra cup of water so they have enough moisture and you’re ready to go.
- Do you mind soggy pasta for leftovers? If you don’t mind the fact that the noodles will get a bit softer after a day or two in the refrigerator you can just cook it all together, if you prefer them to be a bit more al dente even for the leftovers, keep them separate and add them as you need them for each serving.

Now that you know how to make lasagna soup here are some tips to mix things up a bit!
- You can use Italian sausage in place of or alongside the beef, it tastes great and is a new flavor if you decide to make this often like we do!
- Use whatever kind of Parmesan cheese you have, it will be delicious. Romano will work as well.
- Substitute in ground turkey or ground chicken if you need to cut back the fat on this recipe. They’ll still absorb the flavors of the broth and make for a delicious, but lighter version.
