I love bruschetta and, as an Italian, I know how to say it correctly, what can be better than that?  Can I just say that it’s one of the most simple food joys in life? The real Italian way to make Bruschetta is actually grilled bread that’s been rubbed with garlic, olive oil and salt and topped with anything from tomatoes to beans or cured meat. It is delicious no matter what way you make it. So much juicy, fresh flavor in just a few simple ingredients. This Bruschetta Chicken Pasta is a quick and easy, super tasty dinner!

There are all different versions to be had of bruschetta. Remember my Steak Bruschetta? Today we are totally working with an American version of Bruschetta flavors. Dinner in under 30 minutes? This Bruschetta Chicken Pasta is off the chain and is made in only 30 minutes or less. It is a quick and easy, super tasty dinner! Count me in over and over again.

Mixing together cherry tomatoes, basil, garlic cloves, balsamic glaze, salt and pepper to make the yummiest Bruschetta Sauce is how you begin cooking this recipe. Seasoning the chicken with Italian seasoning, salt and pepper and cooking it to perfection in olive oil makes this dish what it is.

Adding the cooked spaghetti noodles and Bruschetta sauce together and topping with the cooked chicken is just the ultimate best of the best.  It can’t get any easier or tastier than this simple dinner, my Wishes and Dishes friends.

This meal is the perfect spring or summer dish. I love me some pasta and chicken dishes (creamy Pesto Chicken Pasta), but most of them are on the heavier side. This Bruschetta chicken is light and fresh.

When it comes to cooking the chicken, you can really cook it any way you like. If you really like the way grilled meat tastes, feel free to grill your chicken outside on the grill! But you could also do it in a skillet or even in the oven. You can even cook it in the crock pot like in my Crock Pot Creamy Ranch Chicken and Potatoes. Just make sure you season the chicken for the full flavor effect.

I’ve had similar dishes as this Bruschetta Chicken Pasta when out at various restaurants and had to recreate it at home. Being able to eat Bruschetta Chicken Pasta whenever the mood strikes me is priceless. It truly is a delicious dinner idea that’s perfect for busy weeknights.

Tips and Tricks

  • Chiffonade (for the basil) is when you roll the basil leaves and slice with a knife till it’s almost shredded.
  • Don’t want a whole tender of chicken? Slice it once it’s cooked and serve.
  • Drizzle more balsamic glaze over top after you plate it for extra flavor and beauty!

Bruschetta Chicken Pasta

Ingredients
  

  • 1-1.5 pounds of chicken breast tenderloins
  • 1 pint of cherry tomatoes
  • 1/2 cup of basil
  • 5 garlic cloves minced
  • 1 tbsp of balsamic glaze
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp Italian seasoning
  • 2 tbsp olive oil
  • 12 oz angel hair pasta
  • 1/2 of parmesan cheese grated or shredded

Instructions
 

  • Slice all the cherry tomatoes in half and chiffonade or slice the basil.
  • In a small mixing bowl combine the tomatoes, basil, garlic, balsamic glaze, salt and pepper, slightly stir and place in the refrigerator to allow flavors to come together while you prepare the chicken and pasta.
  • Season the chicken with the Italian seasoning and salt and pepper (salt and pepper is optional)
  • Add 1 tbsp of oil to a medium size skillet or pan and cook the chicken on medium heat.
  • Begin cooking the pasta in a large pot of salted water on medium/high heat.
  • Take the chicken out of the pan, add the other tbsp of oil to the pan and add in the mixture from the fridge and cook for 2-3 minutes on medium heat.
  • Add the cooked pasta to the pan and stir making sure everything is mixed together and coated.
  • Add the chicken back on top of the pasta and sprinkle with parmesan and serve! Enjoy!
