Strawberry Arugula Salad with Honey Lime Vinaigrette
Strawberry Arugula Salad with Honey Lime Vinaigrette recipe is a healthy green salad loaded with fresh fruit and nuts. It is great for picnics and really captures the essence of summer!
The last time I made this salad was a couple of months ago, but I choose to share it with you this week because the strawberries are so perfect right now! This is a super easy summer salad with lots of options as far as mixing and matching different things. I added almonds to the top but feel free to use pecans, walnuts, whatever! You can throw in any summer fruit or berry in the salad, also. Blueberries or blackberries would be a smart choice (blueberries to make it red and blue for 4th of July?) It also looks super fancy with the pretty colors, so there’s that added bonus. You can also leave out the nuts if there are allergies present, but they give a nice added crunch and a boost of protein!
And definitely toast the almonds if you want to give them great flavor (350 degrees for about 10 minutes or until fragrant). That really enhances their flavor!
I have to say, I made this Strawberry Arugula Salad for Easter this year and my father-in-law hated it while everyone else loved it. You see, I have several picky family members – more than most I would imagine – and he ONLY eats iceberg lettuce. No arugula, no baby spinach, no romaine….just iceberg lettuce. Does anyone in your family have picky tendencies? I’m not saying I don’t, don’t get me wrong. I’m really weird about a few different things. For instance, I won’t eat sauce with tomato chunks in it but I will eat tomato chunks outside of sauce. I also refuse to eat chicken mixed with red sauce. Just the thought of it puts me on the verge of gagging. An Italian girl who doesn’t eat Chicken Parmesan? Yup, that’s me.
Anyway, the rest of the Strawberry Arugula salad got gobbled up, so majority rules! My other current favorite salad? This BLT Chopped Salad. I also have plenty more options here and other side dishes for the summer. Try out this salad for your next family dinner or special occasion – you will not be disappointed.

Ugh – iceberg lettuce! How is that even food? 🙂 Your arugula salad, on the other hand, looks so refreshing – especially with those gorgeous, fresh berries! Want!
Haha – yup, I too have my “picky food tendencies” like spaghetti – thick spaghetti reminds me of eating worms….go figure eh?!
But, this salad is so far from spaghetti – I would be gobbling this Strawberry Arugula salad up in seconds myself!
I just bought some strawberries this morning and off to get more limes tomorrow (constant grocery shopping!) and this looks like such a great salad. I didn’t really realize how good fruit was in salads until the last few years. Thanks for the inspiration.
I have a few family members like that, but over the years of me bringing “different” dishes to family gatherings, they are actually starting to come around! This salad sounds awesome, I love arugula and sweet strawberries are the perfect complement.
Hahaha my husband is picky. Well not as bad as he was when we got married haha but he is somewhat. However, I’d LOVE this!
Super picky eater right here! I don’t like any vegetables other than potatoes and a whooole bunch of other stuff. I always have to make sure there’s something I’ll actually eat before we go somewhere new. 😉 And this salad looks great for picnics! I’d pick out the strawberries. 😀
I just love this salad. I love strawberries in salads, even more so if there’s chicken piled on top. I have a thing for chicken and strawberries. No idea why. I am a very picky eater, but I’ve gotten better in the last couple of year. But I’m quirky about my food touching.
Luckily, nobody in my family is too picky about what I make. They just think it’s weird I would cook all this healthy food… haha! This is my kind of salad! Our summer has been filled with healthy salads and this one is next 🙂
I LOVE the look of this salad! I’m already a HUGE strawberry fan but I love it even more in salads. Plus that vinaigrette is on point!
