Skinny Thai Peanut Chicken Meatballs
Easy Skinny Thai Peanut Chicken Meatballs recipe served over rice with an abundance of sweet, and a bit spicy, coconut peanut butter sauce that you will want to just eat with a spoon! This is a meal I make regularly and you’ll see why.
Summer is almost here and it’s time to eat a bit lighter with these Thai Peanut Chicken Meatballs! You know that saying, “Summer bodies are made in the winter”?
I laughed every time I heard that this past winter. Every day I looked in my mirror and got bigger and bigger throughout the fall, winter, and spring.
I tried to work out as much as I could, but pregnancy has a way of just packing on the pounds in all areas of the body. I know it will totally be worth it all! Even when I was having my crazy food aversions from week 6 to about week 22 of the pregnancy, these Skinny Thai Peanut Chicken Meatballs always sounded good to me.
I absolutely love Thai flavors, as I have shared with you before. Who doesn’t love a good Chicken Pad Thai recipe? Not a day goes by that I couldn’t go for some Pad Thai!
These Thai Chicken Quesadillas are one of my favorites. When you combine Thai cuisine with another all-time favorite mine, meatballs, it’s going to be a winner in my book.
The meatballs are baked and made of chicken, making them extremely healthy. I use whole wheat bread crumbs when I have them on hand to make them even better for you. The sweet and tangy peanut sauce is absolutely killer!
My pregnant self has doubled the sauce in these Skinny Thai Peanut Chicken Meatballs on occasion. I like a LOT of sauce with my meatballs.
When I make this recipe, I normally serve this meal over rice (sometimes my Thai Sticky Rice) and I like to take some of the sauce and mix it in with the rice before serving, as opposed to just scooping some on top.
I have even made this meal with ground turkey when I couldn’t find ground chicken at the store. That definitely works in a pinch! I find ground turkey to be softer and a bit harder to work with than ground chicken, so just keep that in mind. Sometimes I have to add extra bread crumbs to the meatballs.

Starting around week 26, I started to get pretty uncomfortable. I can’t wait to meet my baby girl and adjust to this new life I have been anticipating for so long now. We just want to know what she looks like so badly!

The sauce is the “wow” factor here, guys. Everyone will be asking what’s in this magical sauce!
- 1 lb ground chicken
- 4 green onions, chopped small
- ¼ cup chopped fresh cilantro
- 1 tbsp fish sauce
- 1 tbsp red curry paste
- 1 cup breadcrumbs (white or whole wheat)
- 1 egg
- Salt and pepper, to taste
- 1 tbsp peanut oil
- 1 tbsp red curry paste
- 1 can coconut milk (size: 398 ml)
- 3 tbsp creamy peanut butter
- Salt and pepper, to taste
- 2 tbsp brown sugar
- pinch of crushed red pepper (optional)
- Preheat oven to 375 F degrees. Place parchment paper over a baking sheet.
- Mix all the ingredients for the meatballs together well in a mixing bowl.
- Form the meatballs into 1-2 inch balls. Place meatballs on prepared baking sheet and bake for about 30 minutes OR until done.
- While meatballs are baking, make the sauce. Heat the oil in a medium sauce pan or skillet.
- Add the red curry paste and cook for a couple minutes. Put in the remaining ingredients to same pan, stirring occasionally, and cook for about 5 minutes.
- Place meatballs back to sauce and toss to coat them with sauce. Garnish with fresh cilantro for color.
