Easter is creeping up on us so fast and I got you with this easy recipe. I’m bringing dessert this year and you can bet your little bunny butt these Easter Marshmallow Eggs are what I’ll be bringing alongside my Chocolate Peanut Butter Eggs. The kids won’t complain, the high-maintenance adults who think they are kids won’t complain, and everyone is happy.
Is anyone else having a stressful 2024 so far? I feel like one thing after another keeps going wrong and just strange things happening. I lost someone very important to me this week and it’s been an emotional rollercoaster. This special person was married to my dad for 8 years later in my late teens and adult life. She was very good to him and dedicated basically her whole life to him all the years he was sick and had major health problems from smoking before he ultimately passed away in 2015. She never complained and did it so selflessly.
Anyway, she was just diagnosed with esophageal cancer last spring and passed away on Wednesday. Everything happened so quickly that I hardly got a chance to process it before it happened. I am so fortunate to have been given a day earlier in the week in which I could go see her and say my goodbyes. Saying “bye for now” was so hard, but I’m still thankful I had that opportunity and time with her. I thanked her for all she did for my dad and made sure she knew how special she was to my family.
These simple, homemade marshmallow eggs are way too pretty and way too cute. Who knew making your own marshmallow treats could be so easy? Feel free to use milk chocolate or even white chocolate for this recipe. You can mix up the type of chocolate you use and they will still be amazing.
I never made homemade marshmallow treats like this before, which I’m totally embarrassed to say after being a food blogger for 13 years now. Finally, I decided I wanted to make homemade marshmallow desserts in an Easter egg shape and cover them with melted chocolate almond bark. Now that’s something I can totally get behind and I’m sure you all agree.
Totally not sure if I can ever go back to store-bought marshmallow eggs after tasting this delectable goodness. I’m in serious trouble. The chocolate on the outside and the creamy homemade marshmallow mixture on the inside are just heavenly!
Every kid (and big kid) would love to find these in their Easter basket from the Easter Bunny! Save yourself a trip to the candy shop before Easter and bag some of these babies up with bags of my Salted Caramel Easter Popcorn for your loved ones’ Easter baskets! If someone happens to slip these all up in my Easter basket this year, I’m here for it.
True story: the first year Mr. Wishes and I were married, I made it VERY clear to him that I need to receive Easter baskets every year. I think his exact words were, “No way. That’s ridiculous” Hey, I tried. There is absolutely no reason on earth that adults should not get to partake in the fun for Easter, am I right?
