My family loved it so much that it is now my go-to roast beef recipe of all my crock pot beef recipes. We are big red meat eaters in this house!
This Crock Pot Cranberry Roast Beef recipe is one of my favorites because it is easy and delicious! I am a big fan of using my crock pot and it’s also a pretty inexpensive meal if you get your meat on sale! The ingredients really are simple and easily accessible.
The slow cooker is really a life saver for me in the winter. I make my Slow Cooker Beef Tips and Gravy all the time. When I was growing up, crockpots didn’t hold a candle to the crock pots they make today. They took literally forever to cook anything, and they were just not the same. Slow cookers have come a long way!
My mom used to cook stuffed peppers in her little peach crock pot when I was a little kid, but never a roast. The crockpot is the best way by far to cook a roast that I have found so far in life. The meat just falls apart when you cook it this way and the roast makes its own juice/gravy! Delicious.
The beef roast comes out moist, tender and juicy when you use this Crock Pot Cranberry Roast Beef recipe. I won’t ever go back to making it any other way. It makes the meat so tender and juicy and not dry (have you tried my Slow Cooker Italian Pot Roast?). You can literally eat the gravy with a spoon. I love that the roast makes its own gravy as it cooks, no whisking involved. One less dish to wash is my jam. So, so good.
Try to choose a chuck roast with lots of good marbling within it. I learned all about marbling when I did work with Certified Angus Beef years ago. The fat that runs throughout (the marbling) the meat melts while it’s cooking, essentially self-basting the roast.
Fat equals flavor when it comes to cooking and my Slow Cooker Mississippi Pot Roast is the perfect example of this. Choosing a marbled roast is extremely important, no matter what recipe you happen to be making. After a very long cook time in the slow cooker, the fat has mostly melted into the meat, making it super tender and flavorful.
I seriously used to be the worst at making pot roasts back in the day. They always came out kind of flavorless or so tough that you could barely chew the meat. OMG that is the worst! But since discovering the onion soup mix trick (like in my Crock Pot Coca-Cola Roast) and the most important rule (the waiting), I always get super tender, flavorful, juicy pot roasts now in my old age (ha,ha).
Tips and Tricks

- You can thicken up the liquid in the slow cooker with a cornstarch or flour slurry, if you like.
- Serve over mashed potatoes, potatoes on the side, rice, or stuffing.
Crock Pot Cranberry Roast Beef
Ingredients
- 3 pound beef roast
- 1 14 ounce can cranberry sauce
- 1 envelope dry onion soup mix
- 4 tablespoons salted butter
- 1 cup fresh or frozen cranberries
- Parsley for garnish
Instructions
- Place your roast in the slow cooker/crock pot.
- In a mixing bowl, combine the cranberry sauce and onion soup mix.
- Pour the sauce over the beef roast and add the butter on top.
- Pour the cranberries all around the beef roast.
- Cover and cook on low for 6 hours or high for 4 or until the meat is tender and falls apart.
- Shred the meat and serve!
- Garnish with parsley (optional). Enjoy.
