Crock Pot Chicken Alfredo

This is one of those recipes that I should have put together ages ago! Crock Pot chicken alfredo is so easy and delicious. This classic chicken alfredo Crock Pot recipe is packed with all the comfort food flavors and textures you’d expect, but with none of the time consuming prep or lengthy stove top cook times. One of the biggest perks of making a slow cooker chicken alfredo is that you can set it and forget about it. Another reason I love this chicken alfredo Crock Pot recipe is the fact that the chicken gets a chance to really simmer in the alfredo sauce. It soaks up all those amazing flavors and becomes the star of the dinner table.

What will I need to make this Crock Pot chicken alfredo?
This chicken alfredo Crock Pot recipe is really flexible. If you need to feed a crowd you can double or even triple this recipe without any issues! If you like your alfredo a little more protein heavy you can also add more chicken.
- 2 pounds chicken breast or thighs, skinless, boneless
- 1-2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and Pepper to taste
- 3 cups heavy cream
- 4 cups low-sodium chicken broth, divided 3 cups + 1 cup
- 1 box (1 pound) pasta, rigatoni or penne, or your favorite
- ½ cup fresh parmesan cheese, plus some for garnish
- Fresh parsley for garnish, optional
Slow cooker chicken alfredo makes an excellent meal prep recipe, similar to my Garlic Butter Shrimp with Creamy Sauce. The leftovers somehow manage to taste even better on day two! This recipe will hold up in the fridge for a few days if need be, though the leftovers probably will not last that long.
What kind of pasta works for this chicken alfredo?
You can use any kind of pasta you like but I recommend something sturdy. Some of the more delicate pasta types will overcook in the slow cooker. Remember, you can always keep an eye on the recipe to make sure it’s progressing as you like.
If you are like me and value the Crock Pot for its ability to take care of dinner without you watching…just use penne or rigatoni and you won’t have any issues!
If you decide to use something more delicate or a quick cooking pasta be sure to check on it before the 20 or 30 minutes the recipe calls for. You can always add the chicken and cheese into the recipe early if the pasta finishes cooking sooner than you expect!
Chicken Alfredo Crock Pot Recipe:
- Heat olive oil in skillet over medium-high heat
- Season chicken breast with garlic powder, Italian seasoning, salt and pepper
- Brown sides of chicken in skillet
- Remove and add to crock pot
- Add heavy cream and 3 cups chicken broth
- Cook on low for 3-4 hours, or on high for 2 hours or until chicken is no longer pink and internal temperature is 165 degrees
- Remove chicken from crock pot and set aside on cutting board
- Add 1 cup chicken broth and pasta to crock pot
- Cook on high for 20-30 minutes or until pasta is tender
- Add parmesan cheese and chicken to crock pot and heat through, salt and pepper to taste if needed
- Serve immediately with additional Parmesan cheese and parsley, if desired
- Store leftovers in refrigerator
Why do I need to brown the chicken before it goes into the Crock Pot?
There are a couple of reasons for this. First, chicken needs to reach 165 degrees fahrenheit internally to be safe to eat. Searing it first helps to make sure the chicken doesn’t have too much cooking to do in the Crock Pot. Secondly, when you sear meat before a long, slow cooking process it helps to hold in the juices and keep the meat moist and tender!
Another thing to keep in mind is that you will be pulling the chicken out to chop it up before serving. This is a prime opportunity to check it with a meat thermometer and be sure it is done cooking!
Why should I make homemade alfredo sauce?
If you are thinking “I can just pick up a couple jars of alfredo sauce for this recipe” STOP! Making the alfredo sauce for this recipe could not be any easier and trust me, it makes a big difference. Homemade is always better!
Crock Pot chicken alfredo is easy but the homemade sauce is what really shines. It tastes so much more fresh and is much closer to restaurant quality than what you’ll find in a jar at the grocery store!
