With summer almost officially upon us, it’s a good time to talk about fun and refreshing drinks.  This Watermelon Lemon Cooler makes the perfect cool drink.

  Summer was always my favorite time of year and yields the best memories for me.  What are your favorite childhood summer memories?  Mine were going to all my brothers’ baseball games at the park, playing outside in the sun all day and riding bikes or rollerblading with all the kids in the neighborhood until dinnertime.  My brothers and I would eat dinner and then go back outside until it got too dark to see..  not having a care in the world.  It’s like that Bucky Covington song, ” A Different World”, except we did have video games, but we still preferred to play outside 🙂 We drank from the garden hose, (I still do that occasionally) and didn’t worry.   Maybe kids nowadays are coddled too much?  Wow, that sentence makes me feel old!

This cool, refreshing, nonalcoholic drink is guaranteed to cool you down on those hot summer days.  It comes together really fast and is served icy cold! It’s  something you could drink with brunch, or before dinner on a warm evening, or at a festive lunch.  The bright, fresh flavors of watermelon, mint and lemon mingle together and the result is light and refreshing.  It’s good for groups too.  But make a lot — it will be a crowd-pleaser.

Watermelon Lemon Cooler

Watermelon Lemon Cooler

INGREDIENTS:

1 1/2 pounds (4 cups) sliced seedless watermelon, rind removed
1 cup lemon sorbet
1 lemon, zested
1 1/2 cups cold water
Watermelon wedges and mint, for garnish

DIRECTIONS:

In a food processor, blend watermelon, sorbet, and lemon zest until very smooth.

Stir in 1 1/2 cups cold water; cover and refrigerate until very cold.

Serve over ice and garnish with watermelon wedges and mint.
