Happy almost February! I’m so excited for Valentine’s Day this year because I know Eliza is going to absolutely love it. This is the first year she is in school (preschool) and she’s having a party with her classmates and gets to really capture the full effect of the “holiday”. I think I’ll send her with some Valentine’s Day Millionaire Bars to make her party extra special.

Pink seems to be the theme of the day today. Ironically, I had to pick Eliza up early from school today with pink eye. How does one even get pink eye? I’ve never had it in my 40 years of life and now she gets it at age 4. I’m awaiting my fate, since it is apparently highly contagious. My poor baby – it’s one thing after another with her ever since the end of August. We can’t catch a break with all of these sicknesses! We had a stomach bug, COVID, bronchitis, multiple random viruses, and now pink eye.

Crinkle cookies are always a hit with the adults AND kids, but these in particular are even more so given the pretty pink color. They really are perfect and quick for kids to help bake up. One of the many ways I incorporate learning with Eliza is through cooking and baking. It is a great way to teach measurements and how to follow directions without being too formal. Not that she always follows my directions, but, yeah.

These yummy cookies get their crinkle look from being rolled in powdered sugar. The white and pink together is just so purdy, am I right?

You know I’m all about the easy recipes and desserts, so I used a strawberry cake mix as the base for these cookies. I used a box of Duncan Hines Signature Strawberry Cake mix, but you can use anything you can find or already have on hand. I really like this particular brand because their mixes seem a little more upscale than the competition as far as taste and quality.

Make sure you don’t skip the step of chilling the dough for about 30 minutes before rolling and baking. This cookie dough tends to get really super sticky if you don’t. This step will save you a lot of trouble in the long run! You do not even need to cover the bowl with the cookie dough in it. Simply add the mixing bowl to the fridge if you plan on baking them right after the 30-minute mark.

If you make the dough ahead of time and plan on baking these Strawberry Crinkle Cookies the next day, be sure to wrap the dough tightly with plastic wrap and bake within 24 hours. You might want to remix the dough with your hands really quickly because chances are it might be a tad dry around the edges or top layer of the dough. Alternately, freeze the dough (before rolling in the confectionary sugar) and it will keep well in the freezer.

Ingredients
  

  • 1 box of strawberry cake mix 15.25 ounces
  • 6 tablespoons unsalted butter melted
  • 2 large eggs
  • 2 tablespoons lemon juice
  • 3/4 cup powdered sugar

Instructions
 

  • Line a baking sheet with parchment paper or silicone baking mat and preheat the oven to 350 degrees.
  • Combine the cake mix, butter, eggs, and lemon juice together in a medium sized mixing bowl and combine.
  • Use a 2 TBSP cookie scoop (if you have one) to create cookie dough balls the same size. You can use a 1 tablespoon cookie scoop to yield more (smaller) cookies, but definitely decrease the baking time by 1-2 minutes).
  • Chill the dough for 30 minutes to prevent stickiness.
  • Roll the cookie dough balls in the powdered sugar until they are completely coated and place them about 2 inches apart on the baking sheet.
  • Bake for 11 minutes at 350 degrees.
  • Remove from the oven and let cool completely on the baking sheet.
  • Store in an airtight container at room temperature for 4-5 days. Enjoy!
