Well, I’m lame then. I am completely obsessed with this stovetop macaroni & cheese. So much so that I make it often and eat way too much of it each time.

I really don’t think you can go wrong here. It’s absolutely delicious and perfect! I mean, if you’re looking for a “meaty” mac & cheese you can always try my One Pot Chili Mac and Cheese.
Making this Stovetop Macaroni & Cheese was one of those “I never need another recipe in my entire life” moments for me. I have been making it for years now and never looked back…or at another stovetop recipe…ever again. I had that same kind of moment with my Sloppy Joe Macaroni and Cheese a few years back.
I hope you are all surviving the winter over there. I’m proud of myself for making it three days this week doing the whole parenting thing alone while Mr. Wishes was out of town in Charleston for a business trip. I swear that I don’t know how single mothers do it! I give them so much more credit that I ever have before.
I even, with the encouragement of my mom, ventured out the other day to take Eliza on a fun outing. We went to the library and Wegmans café to get dinner. No big deal, but YES a big deal when I was thinking how much easier it would have just been to stay home.
Going out was well worth it, as Miss Social Butterfly enjoyed running wild around the library and wreaking havoc in Wegman’s café with pizza all over the floor and two giant cups of ice water spilled on the floor. (They had to call for clean-up with the heavy-duty mop!)
Here is a little secret: I like to double this Stovetop Macaroni & Cheese recipe so I can have leftovers for lunches the following days. You know what they say….cook once, eat twice (or five times, in this case). I highly recommend that you do the same.
Also, my kid will not eat this. She ate my mom’s homemade macaroni & cheese on Christmas Eve, but won’t touch this stuff. What kid doesn’t like extra creamy and cheesy macaroni and cheese? I will fix this eventually, I assure you.
- 8 oz. elbows or shells, cooked according to package directions
- ¼ cup unsalted butter
- ¼ cup flour
- 1 teaspoon dry mustard
- 2¼ cup whole milk or half 'n half
- 8 oz. sharp white cheddar (sometimes I mix yellow and white), freshly shredded
- Salt and pepper, to taste
- Melt butter in a large pot over medium heat.
- Add flour and dry mustard and cook while whisking occasionally for 3-4 minutes.
- Slowly pour in whole milk while stirring with whisk. Cook and continue whisk until smooth.
- Bring to a light boil and boil for about 2 minutes.
- Add shredded cheese, stir until smooth and completely melted.
- Stir in warm cooked pasta.
- Add salt and pepper to taste. Enjoy!
