When fall rolls around I start baking up a storm, including this caramel apple pie. The cooler weather means that I can run the oven without worrying about heating up the house. Making desserts is one of my favorite things to do around the holidays.

This caramel apple pie recipe is simple but so delicious. I don’t have a lot of pies on my site and it’s time to change that! - 1 single pie crust
What you need for caramel apple pie filling:
- 7 cups (6-7 medium apples) Granny Smith apples, cleaned and sliced
- 2 teaspoons lemon juice
- ½ cup white granulated sugar
- ¼ cup all-purpose flour
- ¼ teaspoon salt
- 2 teaspoons of apple pie spice or 1 teaspoon cinnamon, ¾ teaspoon ground nutmeg and ¼ teaspoon ground cloves
- ½ cup caramel topping plus additional for garnish

- ¾ cup light brown sugar, packed
- ½ cup all-purpose flour
- ½ cup oats, quick cooking
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- ½ cup pecans, chopped
- ½ cup (1 stick) butter, softened
What kind of apples should I use for this recipe?
You can use any type of apples that you prefer but I like to use a firm apple when baking. They hold up best when baking and softer apples have a tendency to turn to mush when baked for a long time.
What kind of caramel topping should I use?
You can use the premade caramel sauce that can be found in the grocery store near the ice cream toppings. If you like to make homemade caramel topping you can do that as well! Either way it adds a nice sweet and savory touch to this indulgent dessert.
If you prefer a less sweet dessert you can leave the caramel topping out of the recipe altogether. Your pie will still be delicious with or without the topping.

Here is the recipe for making caramel apple pie filling and how to put the pie together for the perfect sweet and gooey treat! Everyone will love this pie…you might want to make two! If you do decide to double the recipe it makes great use of the oven. Since these pies need to bake for 40-45 minutes being able to put two in at once is excellent.
You can make these pies in advance if you like and making an extra one to share with someone is easy! This caramel apple pie recipe doubles easily. One pie serves 8 so if you are feeding a crowd you may wish to make an extra anyway.
- Roll out the pie crust and form it into your pie plate or dish.
How to make caramel apple pie filling:
- Slice your apples and place in a large bowl.
- Add the lemon juice and stir to coat the apples.
- Add in the sugar, flour, salt and apple pie spice.
- Stir to combine well until all of the apples are coated.
- Add your apple mixture to the pie crust.
- Drizzle with ½ cup caramel topping.
How to make caramel apple pie topping:
- In a medium bowl, combine brown sugar, flour, oats, cinnamon and nutmeg.
- Stir in the pecans to combine.
- Add the butter to form a crumb topping.
- Sprinkle the topping over the apple mixture.
How to make caramel apple pie:
- Wrap the edges of your pie with foil to prevent over browning or burning.
- Place the caramel apple pie on a cookie sheet with rim to prevent juices dripping into the oven!
- Bake the pie for 40-45 minutes, make sure to check part of the way through to be sure the pie is not getting too brown. If it is, add a piece of foil to the top and continue baking.
- Remove pie when filling is bubbly and topping is golden brown. Apples should be tender
- This pie is best served warm with a drizzle of caramel topping and ice cream but you can serve it cold as well.
- Store any leftovers in the refrigerator.
