Do you agree? I use white chocolate swirled with cute little red and pink and a few Valentine’s sprinkles and they are perfect for Valentine’s Day! These are great for a Valentines dessert or to give away.

I can’t believe it’s Valentine’s Day again and I’m delving into the Valentine’s Day recipes. The older I get the faster time goes by. I’m turning 40 this week. I don’t like to admit my age, but nobody reads this blog anyways. Haha! It can be our little secret.

I’m officially really old. I remember being a teenager and thinking how old my mom was when we had her 40th birthday. She likes to tell the story of how excited she was on her 40th birthday because my dad was taking her to a really nice restaurant that she had never been to before.

My dad thought he had this great plan that she would love. He planned a surprise party for her instead of taking her to the restaurant. I remember being so excited about it and keeping the secret! We showed up at her best friend’s house to surprise her. It was all of her church friends and a LOT of kids.

It’s funny how my dad and us kids thought it was something she would actually be excited about. Of course, she was polite and acted like it was the best 40th birthday ever and there was nothing else she would rather do, even to eat at a nice fancy restaurant. She joked the other day about how she never actually made it to that restaurant. It ended up closing down not too long after that.

That story taught me something, though. I make it known very early on to my husband that I do NOT want a surprise party. I’m not a surprise party person. I look like I’m homeless most of the time, so if I’m going to be seeing people, I need to be prepared for that.

Anyway, Valentine’s Day Millionaire Bars. I need to eat a whole pan of these for my birthday, I think. Birthday calories don’t count count, right? You can even top these off with a scattering of sea salt and you have a decadently rich treat that lives up to every penny of its lucrative name. They definitely earn their name in every way.

As you know, my sweets-loving family is a sucker for trying out new, delicious desserts. When we saw a different version of these millionaire bars for the first time, we knew we had to try them. I mean, any dessert that has that has THAT MUCH caramel in it, has to be awesome, right? Right! They remind me a lot of a Twix bar, but with white chocolate.

Buttery shortbread + chewy caramel + rich chocolate; this is the formula for deliciousness, I mean, come on. There’s something about those layers that just makes these cookie bars look like, well, a million bucks.

As one of my other main loves in life is cookie bar desserts, the marriage between those, and the caramel and chocolate from millionaire bar shortbread is HEAVEN in every single bite.

  • You can use regular chocolate instead of the white chocolate.

Instructions
 

  • Preheat oven to 325 degrees.
  • Line a 9x13 pan with parchment paper and lightly spray with non-stick cooking spray.
  • In a medium mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add in the flour and vanilla and mix until just combined. Mixture will be crumbly.
  • Gently press the shortbread mix in an even layer on the bottom of your prepared pan.
  • Prick all over with a fork.
  • Bake for 30 minutes until lightly golden.
  • Remove from oven and let cool while you prepare the caramel.
  • In a small pot over medium-low heat, stir caramels together with the cream until fully melted and no lumps remain.
  • Pour the caramel over the shortbread layer. Set aside.
  • For the chocolate layer, place each color of melting chocolate in a separate bowl.
  • Microwave each color in 30 second intervals until smooth and melted.
  • Pour the white chocolate over the caramel and spread out.
  • Add small dollops of the red and pink over the white chocolate.
  • Using a knife gently swirl the red and pink into the white. Make sure you do not drag your knife through the caramel layer or will look messy.
  • Immediately sprinkle with the Valentines sprinkles and place in the refrigerator for at least 20 minutes until completely cool.
  • Slice into squares and serve! Enjoy.
