Bunny Butt Lemon Truffles
Ingredients
- 1 8 ounce package cream cheese softened to room temperature
- 1 package 14.3 ounce lemon oreos
- 1 ½ pounds white melting chocolate either wafers or almond bark
- ½ pound pink melting chocolate
Instructions
- In a large mixing bowl, add your softened cream cheese.
- Crush up your oreos into a fine crumb in your food processor.
- Add your oreo crumbs to the cream cheese.
- Using an electric mixer stir to combine everything into a dough.
- I use a 1 ½ tablespoon cookie scoop to make the balls and set on a tray lined with parchment paper.
- Place the tray with the truffles into the freezer to chill, this will make dipping much easier.
- When ready to dip melt 1.5 pounds of white chocolate in 30 second intervals in the microwave until smooth and melted.
- Dip each ball into the white chocolate and using 2 forks shake off any excess chocolate and place back onto the parchment paper.
- Pour the remaining white chocolate into a ziploc bag and snip off a tiny corner.
- Pipe a little bunny tail on each truffle.
- Next on a parchment lined tray pipe 40 round bunny feet shapes.
- Set the tray into the fridge to cool.
- Meanwhile melt your pink chocolate in 30 second intervals until melted and smooth. Place into a ziploc bag and snip off the corner.
- Remove the bunny feet from the fridge and flip each one over.
- Pipe 2 bunny toes and a little foot pad on each foot.
- Place back in the fridge to chill until set, about 5-10 minutes.
- Pipe more white chocolate onto the back of each bunny foot and attach 2 to each truffle.
- Let set and serve! Enjoy.
