In a large mixing bowl, add your softened cream cheese.
Crush up your oreos into a fine crumb in your food processor. Add your oreo crumbs to the cream cheese.
Using an electric mixer stir to combine everything into a dough. I use a 1 ½ tablespoon cookie scoop to make the balls and set on a tray lined with parchment paper. Place the tray with the truffles into the freezer to chill, this will make dipping much easier.
When ready to dip melt 1.5 pounds of white chocolate in 30 second intervals in the microwave until smooth and melted.
Dip each ball into the white chocolate and using 2 forks shake off any excess chocolate and place back onto the parchment paper.
Pour the remaining white chocolate into a ziploc bag and snip off a tiny corner.
Pipe a little bunny tail on each truffle.
Next on a parchment lined tray pipe 40 round bunny feet shapes.
Set the tray into the fridge to cool.
Meanwhile melt your pink chocolate in 30 second intervals until melted and smooth. Place into a ziploc bag and snip off the corner.
Remove the bunny feet from the fridge and flip each one over.
Pipe 2 bunny toes and a little foot pad on each foot.
Place back in the fridge to chill until set, about 5-10 minutes.
Pipe more white chocolate onto the back of each bunny foot and attach 2 to each truffle.
Let set and serve! Enjoy.
