Using a 9x9 baking dish, line it with parchment paper and spray it with non stick cooking spray. Set aside.
Set up 3 medium sized bowls and put them to the side.
In a large saucepan add the sugar, butter and evaporated milk and cook on a medium heat, stirring pretty occasionally.
Once it becomes a boil, lightly boil for 5 minutes and stir constantly. Turn off the heat.
For next step you need to work quickly! Add the marshmallow creme and white chocolate chips, stir until everything is combined and smooth.
Divide the mixture into the three bowls you set out. Add red food coloring to one and mix, add blue to the other bowl and mix. Leave one bowl white. Add the blue mixture to the prepared baking dish, spread out evenly, add the white on top and spread out evenly, add the red on top and spread. If you want to top with sprinkles do it immediately after you spread the red fudge on top.
Let the fudge cool in the fridge completely for about 1 hour before slicing. Enjoy!
