Hello from Mexico!  I am in Cancun for a little getaway right now with Mr. Wishes.  Our brains were in need of a little break with a heck of a lot of stuff that we have going on at home lately so we planned a last-minute vacation to celebrate our 6th wedding anniversary.  A change of scenery is always much appreciated and spontaneity is our jam…so here we are!  I want to soak of up every minute that I can here at this beautiful resort as we’re not here for a very long time, therefore I am going to keep this short and sweet (no pun intended).

This is a super simple recipe that I feel funny even calling a “recipe”.  It’s more of a quick and easy IDEA that anyone can whip up in just a few minutes.  Note: this would be a good one to have kids help you with!

 Peanut Butter Covered Strawberries are not only delicious but also a beautiful gift for loved ones or for your significant other on a special occasion.  These Lemon Mousse Stuffed Strawberries are also a good idea!  There’s just something so fancy about strawberries smothered in chocolate or peanut butter, don’t you agree?  Now, you may think the peanut butter is a weird idea because strawberries are always always always just covered in melted chocolate of some sort.  Well, they might be weird, but they are weirdly delicious.  Peanut butter and jelly sandwiches are strawberry and peanut together, aren’t they?  So why not these peanut butter covered strawberries.  It is the same idea, just in a different form. Give them a chance – you’ll be pleasantly surprised!

Ingredients
Instructions
  1. Line a baking sheet with parchment paper or wax paper. Set aside.
  2. Wash and dry strawberries.
  3. Place peanut butter chips in a large microwave-safe bowl. Microwave on high for 25 or 30 second intervals, stirring well in between so that the chips won't burn, until melted and smooth.
  4. Hold strawberries by the leaves (you can use a skewer or fork) and dip each strawberry into the melted peanut butter, leaving a small area uncovered. Add sprinkles (if adding, I left them plain).
  5. Place strawberries on the wax/parchment paper then transfer to the fridge to set.
  6. Serve or store in air-tight container.
