Happy crazy Thanksgiving holiday week!  Is everyone’s minds going a mile a minute?  I have a great easy to make  cranberry sauce recipe I wanted to share with you just in case you are still planning your menu.  Confession: I have never made cranberry sauce at home before this!  Like me, if you have never made homemade cranberry sauce, you are really missing out.  I’m usually not even a huge fan of the stuff, but I had a homemade version last year that I absolutely loved and had to try to recreate it.  This deliciousness has a burst of flavor with every bite.  You can taste a hint of cinnamon and a slight orange flavor that gives it the perfect amount of sweetness, but the Orange Cointreau is what I think gives it that something special.  You can’t taste the alcohol at all, but it just gives it that unique taste without being too overpowering.

This cranberry sauce is so simple to make that I can’t imagine anyone would still want to buy the stuff in a can ever again after tasting this. This cranberry sauce is 100 times better – I promise.  The best part is that it’s BAKED so you don’t have to stand there at the stove and watch/stir the pot and likely forget about it and let it burn to the bottom of the pan and have to start all over (oh wait – am I the only one who does that regularly while cooking?)  This is a keeper.  Family tradition established.

Orange Cointreau Baked Cranberry Sauce

This is a delicious and easy cranberry sauce baked right in the oven with cinnamon and a hint of Orange liqueur - requires no time standing at the stove to make your holidays less stressful!
Ingredients
  • 1 12-ounce package fresh cranberries
  • 1¼ cups granulated sugar
  • 2 tablespoons frozen orange juice concentrate, thawed
  • 2 tablespoons Orange Cointreau, Grand Marnier, or other orange-flavored liqueur
  • ½ teaspoon ground cinnamon
Instructions
  1. Preheat oven to 325°F.
  2. Place cranberries in 8x8x2-inch glass baking dish. Sprinkle sugar, then orange juice concentrate over. Cover tightly with foil.
  3. Bake until juices form and cranberries are very soft, about 50 minutes to an hour.
  4. Uncover; mix in orange liqueur. Cover and refrigerate until very cold, about 4 hours.
  5. Can be prepared a few days ahead. Keep chilled.
