Ingredients
  • 1 large egg
  • 1 cup (200 g) sugar
  • ⅔ cup (160 g) buttermilk
  • ½ cup (120 g) vegetable or canola oil
  • 2 tbsp (30 g) plain yogurt
  • 1 tbsp vanilla extract
  • 1 cup + ⅔ cup (210 g) flour
  • ⅛ teaspoon of sea salt
  • ½ tbsp (7.5 g) baking soda
  • 1 tbsp + ½ tbsp (10 g) cocoa powder
  • 1 tbsp gel red food coloring (more or less depending on how red you want it)
  • 1 + ⅔ cup (200 g) cream cheese
  • 1 cup (180 g) semi-sweet or milk chocolate chips
Instructions
  1. Preheat the oven to 350 degrees F
  2. In a large mixing bowl mix the egg, sugar, yogurt, buttermilk, and vegetable/canola oil and vanilla extract.
  3. Mix in the flour, cocoa powder, salt and baking soda.
  4. Add the dry ingredients to the mixture and mix.
  5. Add the food coloring, small amounts at a time to get desired shad of red.
  6. Transfer the mixture into a 13x9 (or similar size) cake pan and bake for 20 minutes.
  7. Before removing the truffles from the oven, test with a toothpick or a knife. If it comes out clean, they are done.
  8. Let cool for 15 minutes.
  9. Melt the chocolate in a double boiler or in the microwave.
  10. After the cakes cooled, crumble the cake, and add the cream cheese into it and mix it.
  11. Form them into balls and dip in the melted chocolate and decorate with sprinkles of choice.
  12. Cool them in the fridge.
