This Holiday Sugar Cookie Bars recipe is the easiest way to make sugar cookies! They are SO delicious topped off with a sweet, creamy frosting!

Ingredients
  • ¾ cup of unsalted butter softened to room temperature
  • 1 cup of granulated sugar
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract OR ½ teaspoon almond
  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
Frosting:
  • ½ cup softened butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2-3 Tablespoons heavy cream or whole milk
  • sprinkles
Instructions
  1. Preheat oven to 350˚F.
  2. Line a 9x13 baking pan with parchment paper
  3. Lightly grease or butter the parchment paper
  4. Cream the butter and sugar together until light and fluffy
  5. Beat the eggs in, one at a time, scraping the bowl between each addition
  6. Mix in the vanilla extract
  7. In a smaller bowl stir the flour, salt, and baking powder together
  8. Add it to the sugar mixture and mix well
  9. Scrape the dough into a 9x13 pan and pan out
  10. Bake at 350˚ for 20 minutes or until the cookie is just lightly browned
  11. Remove from the oven and cool completely in the pan on a wire rack
  12. When you’re ready to frost put the soft butter in a mixing bowl and mix it lightly to make it smooth
  13. Then mix in the powdered sugar, it will look crumbly
  14. Add the vanilla, a pinch of salt, and one Tablespoon of the milk
  15. Mix with the mixer, add another Tablespoon of milk and see how it looks, if it’s soft and spreadable you’re done, if you need to add more milk to make it spreadable you can add the last Tablespoon
  16. Frost the sugar cookie in the pan and cover with desired sprinkles
  17. Lift it out of the pan by the parchment paper and cut into bars
  18. Enjoy!
