Sweet Potato Pie

- 1 pie crust, unbaked to fit a 9 inch pie
- 2 cups (about 1 ½ pounds) sweet potatoes, cooked and mashed
- ⅓ cup unsalted butter, melted
- ½ cup granulated white sugar
- 2 eggs, slightly beaten
- ¾ cup evaporated milk
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice or ½ teaspoon ground cinnamon and ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 2 cups heavy whipping cream
- 4-5 tablespoons powdered sugar, sifted
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- Roll out pie crust and form into pie plate
- Preheat oven to 350 degrees F
- In a large mixing bowl, combine cooked and mashed sweet potatoes, butter, sugar, evaporated milk, eggs, spice, vanilla and salt
- Whisk together until completely smooth
- Pour into uncooked pie crust
- Wrap edges of pie with foil to prevent over browning
- Bake for 50-55 minutes or until knife inserted in the center comes out clean
- Cool and serve with spiced whipped cream
- Pour heavy whipping cream into large mixing bowl
- Beat with a mixer on medium speed, increasing speed until soft peaks form
- Gradually add powdered sugar and beat until stiff peaks form
- Add cinnamon and nutmeg, beat slightly to combine
