  • 1 pie crust, unbaked to fit a 9 inch pie
  • 2 cups (about 1 ½ pounds) sweet potatoes, cooked and mashed
  • ⅓ cup unsalted butter, melted
  • ½ cup granulated white sugar
  • 2 eggs, slightly beaten
  • ¾ cup evaporated milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice or ½ teaspoon ground cinnamon and ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
Spiced Whipped Cream (optional):
  • 2 cups heavy whipping cream
  • 4-5 tablespoons powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  1. Roll out pie crust and form into pie plate
  2. Preheat oven to 350 degrees F
  3. In a large mixing bowl, combine cooked and mashed sweet potatoes, butter, sugar, evaporated milk, eggs, spice, vanilla and salt
  4. Whisk together until completely smooth
  5. Pour into uncooked pie crust
  6. Wrap edges of pie with foil to prevent over browning
  7. Bake for 50-55 minutes or until knife inserted in the center comes out clean
  8. Cool and serve with spiced whipped cream
Spiced Whipped Cream (optional):
  1. Pour heavy whipping cream into large mixing bowl
  2. Beat with a mixer on medium speed, increasing speed until soft peaks form
  3. Gradually add powdered sugar and beat until stiff peaks form
  4. Add cinnamon and nutmeg, beat slightly to combine
  5. Enjoy!
