This is an easy salad recipe: Blueberry-Brie Pecan Salad with Protein Puff Croutons. The protein puffs and candied pecans add so much crunch and flavor!

  • 1 bag of arugula
  • 1 pint blueberries
  • 5 ounces brie cheese, cut into small pieces
  • ⅓ cup candied pecans
  • FitJoy Protein Puffs (for croutons, flavor of choice)
  • Lemon, Honey & Thyme Vinaigrette {see recipe below}
  • ½ cup olive oil
  • ¼ cup fresh lemon juice
  • 3 tablespoons honey
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon thyme
  1. Whisk all ingredients together in a small mixing bowl. Set aside until ready to use.
Salad: In a large salad bowl
  1. Add blueberries, brie and candied pecans to arugula and toss to combine.
  2. Sprinkle FitJoy protein puff croutons over top of bowl, toss salad mix with vinaigrette to taste until lightly dressed. Enjoy!
