Power Chicken Hummus Bowl is a cross between a salad and a bowl and is a healthy Mediterranean-inspired recipe perfect for lunches or easy weeknight dinners!

  • 1 bag mixed salad
  • ½ cooked chicken breast, shredded
  • ¼ cup hummus
  • ⅓ cucumber, sliced
  • 4 slices of red onion
  • 1 tomato, chopped
  • Fresh Cilantro, for sprinkling
Dressing (or use any vinaigrette):
  • ¼ cup apple cider vinegar
  • 1 tablespoon honey
  • 2 garlic cloves, finely minced or pressed
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 pinch crushed red pepper flakes
  • ½ cup extra virgin olive oil
  1. Toss all ingredients in a bowl or leave separated, sprinkle with fresh Cilantro. Top with a light vinaigrette and enjoy!
