Power Chicken Hummus Bowl is a cross between a salad and a bowl and is a healthy Mediterranean-inspired recipe perfect for lunches or easy weeknight dinners!

Ingredients
1 bag mixed salad
½ cooked chicken breast, shredded
¼ cup hummus
⅓ cucumber, sliced
4 slices of red onion
1 tomato, chopped
Fresh Cilantro, for sprinkling
Dressing (or use any vinaigrette):
¼ cup apple cider vinegar
1 tablespoon honey
2 garlic cloves, finely minced or pressed
¼ teaspoon salt
¼ teaspoon pepper
1 pinch crushed red pepper flakes
½ cup extra virgin olive oil
Instructions
Toss all ingredients in a bowl or leave separated, sprinkle with fresh Cilantro. Top with a light vinaigrette and enjoy!
