These Mini Sausage, Spinach and Cheese Frittatas are a fun change-of-pace breakfast recipe or on-the-go snack idea packed full of protein!

Ingredients
  • 1 lb breakfast sausage
  • ¼ cup finely diced onion
  • ¾ cup fresh baby spinach
  • 6 large eggs
  • ¼ cup heavy cream
  • ¼ cup shredded Jarlsberg Swiss cheese
  • 6 small slices Jarlsberg swiss cheese
  • salt & pepper, to taste
  • cooking spray
Instructions
  1. Preheat oven to 350°F.
  2. In a large skillet, brown sausage over medium-high heat until no longer pink.
  3. Remove sausage to paper towel lined plate to absorb extra grease; leave grease in pan (add a bit of olive oil if no grease remains).
  4. Cook onion and spinach in pan until soft. Season with salt and pepper, to taste.
  5. In a medium mixing bowl, beat eggs and cream together until combined.
  6. Stir in sausage and onion/spinach mixture. Add in shredded cheese. Season with salt and pepper, to taste.
  7. Butter or grease a 12 cup muffin tin.
  8. Spoon about ¼ cup of mixture into each muffin cup.
  9. Cut each slice of swiss cheese in half and place one square of cheese on top of each filled muffin cup.
  10. Bake in preheated oven until cheese is bubbly and frittatas are set in the middle and lightly browned, about 20-25 minutes.
  11. Remove frittatas from oven and allow to cool for about 5 minutes.
  12. Remove from muffin tins and serve warm. Enjoy!
