Mini Sausage, Spinach and Cheese Frittatas

- 1 lb breakfast sausage
- ¼ cup finely diced onion
- ¾ cup fresh baby spinach
- 6 large eggs
- ¼ cup heavy cream
- ¼ cup shredded Jarlsberg Swiss cheese
- 6 small slices Jarlsberg swiss cheese
- salt & pepper, to taste

- Preheat oven to 350°F.
- In a large skillet, brown sausage over medium-high heat until no longer pink.
- Remove sausage to paper towel lined plate to absorb extra grease; leave grease in pan (add a bit of olive oil if no grease remains).
- Cook onion and spinach in pan until soft. Season with salt and pepper, to taste.
- In a medium mixing bowl, beat eggs and cream together until combined.
- Stir in sausage and onion/spinach mixture. Add in shredded cheese. Season with salt and pepper, to taste.
- Butter or grease a 12 cup muffin tin.
- Spoon about ¼ cup of mixture into each muffin cup.
- Cut each slice of swiss cheese in half and place one square of cheese on top of each filled muffin cup.
- Bake in preheated oven until cheese is bubbly and frittatas are set in the middle and lightly browned, about 20-25 minutes.
- Remove frittatas from oven and allow to cool for about 5 minutes.
- Remove from muffin tins and serve warm. Enjoy!
