Ingredients
3 Carrots, peeled and iced
3 Celery stalks, diced
2 large Yukon gold potatoes, chopped
1 White Onion, Diced
4 cloves Garlic, Minced
1 14.5 ounce can Diced Tomatoes (don't drain the juice)
2 tablespoon Fresh Parsley
1 teaspoon Italian Seasoning
½ teaspoon pepper
pinch of Crushed Red Pepper Flakes (optional)
2 Boneless, Skinless Chicken Breasts
2 32 ounce containers Chicken Stock
1 pound Ditalini Pasta
Instructions
Place the carrots, celery, potatoes, onion, garlic cloves and diced tomatoes (with juice) in the slow cooker/crock pot.
Sprinkle with parsley, Italian seasoning, pepper, and red pepper flakes (if using). Mix,
Add in the chicken breasts and chicken stock.
Mix well until everything is covered. Cook on low heat for 6-8 hours or high heat 3-4 hours (make sure chicken is cooked through).
Cook pasta according to directions on package; drain, rinse and set aside.
Remove the chicken breast, shred with two forks, place back in the crock pot with the soup.
Serve soup in bowls and top with pasta (as much as each person wants). Enjoy!
