Chicken Fajita Quesadillas are the perfect weeknight meal recipe and great for Mexican food night! They're so easy to make right at home and you'll love this variation of the traditional quesadilla.

Ingredients
  • ½ lb. boneless skinless chicken breasts, cut into thin strips or shredded
  • ¾ cup each sliced onions
  • ¾ cup red OR green pepper (or mix them), chopped or cut into thin strips
  • ½ cup Salsa
  • ½ cup black beans, rinsed
  • 6 whole tortillas, whole wheat or white
  • 2 cups Shredded Sharp Cheddar Cheese
Instructions
  1. On medium heat, cook chicken in large skillet sprayed with cooking spray or use a non-stick skillet. This takes about 5 minutes or a little less.
  2. Add onions and peppers; cook until slightly softened.
  3. Stir in salsa and beans; cook 3-4 minutes or until heated through, stirring occasionally.
  4. Scoop ¼ cup chicken mixture onto half of each tortilla; sprinkle with cheese.
  5. Fold tortillas in half.
  6. Add quesadillas, in batches, to a large skillet sprayed with cooking spray; cook on medium heat for about 2 minutes on each side or until lightly browned on both sides. Enjoy warm!
