  • 2.5 cups shredded, cooked chicken
  • ½ cup GoAvo spread (or use 1 ripe, mashed avocado)
  • 4 tablespoons plain Greek yogurt
  • 2 tablespoons fresh-squeezed lime juice
  • 3 tablespoons diced red onion
  • 2 green onion, sliced thin
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • pinch of pepper
  • 2 tablespoon fresh cilantro, chopped
  • ½ cup shredded Monterey Jack cheese (or cheese of your choice)
  • 5-6 Tortillas (8 or 10 inch diameter)
  1. In a large bowl combine all ingredients for the avocado chicken salad. Mix until evenly coated.
  2. Using a spoon or offset spatula, spread the mixture over each tortilla, going all the way to the edges, and roll up tightly. Repeat this process with remaining chicken salad/tortillas.
  3. Slice with a sharp knife into 1 inch slices. You can slice them immediately or wrap tightly in seran wrap and refrigerate until ready to serve. Enjoy!
