Creamy Red Pepper Cashew Dip recipe is meat and dairy-free, served hot OR cold, and will be a huge hit for your next tailgate or football party!

  • 1¾ Cups Raw Cashews (soaked for at least 3 hours)
  • ½ Red Bell Pepper
  • 1 Cup Silk Cashew Milk (or other non-dairy milk)
  • 2 Cloves of Garlic
  • 1 Tablespoon fresh Lemon Juice
  • 1 teaspoon Chili Powder
  • ½ teaspoon Kosher Salt
  1. Soak the cashews in a bowl of water for at least 3 hours or overnight until they are soft. Drain well.
  2. Add all ingredients to a high speed blender such as a Blendtec or Vitamix or a food processor.
  3. Blend thoroughly.
  4. To serve the dip hot, heat in a sauce pan over medium low heat, stirring frequently so it doesn't burn.
  5. To serve the dip cold, serve right away.
  6. Serve with chips, pretzels, veggies, crackers, etc.
