 Rich, Creamy Greek Yogurt Alfredo Sauce made is your favorite Italian pasta sauce with amazing flavor but without all the guilt!Happy National Dairy Month!  In case you weren’t aware, this is dairy month and I am having fun experimenting in my kitchen lately with some yummy dairy products.  I came up with the perfect lighter dish for summer for you all to help celebrate dairy! You will love this Creamy Greek Yogurt Alfredo Sauce.

Raise your hand if you love a good, rich (yet extremely fattening) Alfredo sauce?  I have both hands up right now!  This is one of my favorite dishes to order at a restaurant but I always feel a little regret afterwards because of the heaviness of the dish.

This recipe is a lighter version, sans the heavy cream, and uses Greek yogurt to attain the authentic creaminess that Alfredo sauce has.  I honestly never thought a lighter version of Alfredo sauce would win me over but I was proved wrong with this dish – you will be, also!

The month of June celebrates all things dairy.  The American Dairy Association and Dairy Council (also known as “ADADC”) works with 9,000 dairy farm families in New York, Northern New Jersey and Northeastern Pennsylvania.  American’s dairy farming families are celebrated this month.  They are the ones who provide us with healthy, nourishing dairy foods.

Of course I am proud that my home state of New York, with over 5,000 dairy farms throughout the state, is ranked 4th national in dairy farming.  Go, New York!  It is also fitting that I used Greek Yogurt in this Creamy Greek Yogurt Alfredo Sauce recipe because New York is the top yogurt-producing state in the country.

Fun fact: yogurt is New York’s official state snack!  One serving of milk, cheese or yogurt provides 8 grams of high-quality protein and 9 essential nutrients.

Greek yogurt is a great way to lighten up many recipes.  You really won’t miss out on any taste at all!  This yogurt is just one of the many dairy foods that is super high in protein.  It has twice the amount of protein as most regular yogurts, due to the straining process. Six ounces of Greek yogurt typically contains 14–17 grams of protein. The same amount of regular yogurt has 7–8 grams of protein.

Creamy Greek Yogurt Alfredo Sauce

Ingredients
  • 4 Tbsp butter
  • 4 Tbsp All-Purpose Flour
  • 2 Cups Chicken Stock
  • ¾ Cup Plain Greek Yogurt
  • ½ Cup Milk
  • 6 tsp Minced Garlic
  • 1 and ½ Cups shredded Parmesan Cheese
  • salt and pepper, to taste
  • 2 teaspoon fresh Italian parsley
  • 1 pound of your favorite pasta, cooked (I used fettuccine)
Instructions
  1. In a sauce pan over medium heat, melt the butter.
  2. Add the garlic and cook a few minutes until it is fragrant (do not let it burn).
  3. Add the flour, stirring/whisking constantly until nice and bubbly.
  4. Add chicken stock while continuing to stir. Turn heat to low and gradually add milk, Greek yogurt, and Parmesan Cheese.
  5. Stir until smooth and the cheese is melted. Add salt and pepper, to taste. If you let the sauce cool down a little it thickens a lot.
  6. Serve over your choice of cooked pasta noodles. Sprinkle with parsley.
  7. Store any leftover sauce in the fridge and add a little bit of milk before heating it up as it will be very thick once chilled. Enjoy!
