Quick and easy Chocolate Chip Shortbread Cookies recipe are my favorite Christmas shortbread cookie recipe! These cookies are so tender, buttery and delicate! The chocolate chips are the perfect addition.
Ingredients
  • 1 cup unsalted butter, softened to room temperature
  • ½ cup powdered sugar, SIFTED
  • ¼ cup corn starch
  • ½ teaspoon vanilla
  • 1½ cups all-purpose flour
  • ½ cup mini semi sweet chocolate chips
  • ¼ teaspoon salt
Instructions
  1. Pre-heat oven to 325°.
  2. Line your baking sheets with parchment paper or silicone baking mat.
  3. In the bowl of a stand mixer (or use handheld mixer) add butter and powdered sugar and beat on medium speed cream until very fluffy.
  4. Add the salt, cornstarch, vanilla and flour. Beat until very light approximately 2-3 minutes.
  5. Stir in mini chocolate chips and beat on low for about 10 seconds.
  6. Drop by heaping tablespoon, or roll into balls the size of a golf ball and lightly flatten with a fork, place on prepared baking sheets.
  7. Bake for approximately 15-20 minutes(check at 10-12 if your cookies are smaller) until very lightly golden, almost white BUT not browned. Let cool for 5 minutes then carefully move to a wire rack, cool completely before serving. Enjoy!
