It's perfect for holiday entertaining and will be a huge hit with everyone!Get your major stretchy pants on for this recipe I’m sharing with you today.  With Thanksgiving coming up soon, I don’t have turkey on my mind as much as I do delicious desserts and wondering what I’m going to whip up.  I’m not a huge pie baker (they kind of intimidate me) and the holidays can get so hectic.  Therefore, I like to come up with alternate easy dessert recipes that I can make for the holidays that will make everyone forget about the pies and cause me to spend less time slaving over the oven.  Trust me, nobody will mind when you show up with this Caramel Peanut Chocolate Fudge!  Melted semi-sweet chocolate chips, whole peanuts, peanut butter, caramel, butterscotch….how can you ever go wrong?!  It is absolutely out of this world and I had to run 5 miles after eating a piece (or two).  I then reminded myself that holiday calories don’t count.  Indulging in completely acceptable.

For this particular Caramel Peanut Chocolate Fudge recipe, I used Nestle® Toll House® Semi-Sweet Chocolate Morsels and perfectly creamy Nestle® Carnation® Evaporated Milk that I picked up in the baking section of Walmart.  These ingredients are staples for me during the holiday baking season and they worked great in this recipe (I may have even snuck some of the chocolate morsels right out of the bag and eaten them plain – they are too delicious and I just can’t help myself).  I have high expectation amongst my family and friends to produce some killer desserts during the holidays and I think everyone who came to taste-test this amazing fudge was impressed.  They made sure to let me know that before they fell into their sugar comas.

I even included a video on the step-by-step at the bottom of this post .  It’s really easy to make! I hope you try out this amazingly rich, gooey, messy (in a good way) fudge for the holidays.  It’s unlike any fudge you’ve ever had – I promise.  It would even make for the perfect gift to give away to some lucky friends or family members.  You will be everyone’s best friend!

Ingredients
Bottom Layer:
  • 1 cup Nestlé semi-sweet chocolate chips
  • ¼ cup butterscotch chips
  • ¼ cup creamy peanut butter
Filling:
  • ¼ cup butter
  • 1 cup white sugar
  • ¼ cup Nestlé Carnation evaporated milk
  • 1½ cups marshmallow creme (fluff)
  • ¼ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1½ cups chopped unsalted peanuts
Caramel Layer:
  • 1 (14 ounce) package individually wrapped caramels, unwrapped
  • ¼ cup heavy cream
Top Layer:
  • 1 cup semi-sweet chocolate chips
  • ¼ cup butterscotch chips
  • ¼ cup creamy peanut butter
Instructions
  1. Lightly grease a 9x13 inch dish.
  2. For the bottom layer: Combine 1 cup milk chocolate chips, ¼ cup butterscotch chips and ¼ cup creamy peanut butter in a small saucepan over low heat. Cook and stir until melted and smooth. Spread evenly in prepared pan. Refrigerate until set.
  3. For the filling: In a heavy saucepan over medium-high heat, melt butter. Stir in sugar and evaporated milk. Bring to a boil, and let boil 5 minutes. Remove from heat and stir in marshmallow creme, ¼ cup peanut butter and vanilla. Fold in peanuts. Spread over bottom layer, return to refrigerator until set.
  4. For the caramel: Combine caramels and cream in a medium saucepan over low heat. Cook and stir until melted and smooth. Spread over filling. Chill until set.
  5. For the top layer: In a small saucepan over low heat, combine 1 cup milk chocolate chips, ¼ cup butterscotch chips, and ¼ cup peanut butter. Cook and stir until melted and smooth. Spread over caramel layer.
  6. Chill 1 hour before cutting into 1 inch squares.
