Happy Friday to everyone! I hope that everyone had a great week. I am finally getting over my sickness and am ready to relax and enjoy the weekend. Temperatures have been in the 90′s and super humid here the last couple of days! It’s very unusual for it to be this hot in May and it is supposed to last through the weekend. I need to make friends with some of our neighbors with pools
As you can see, I’m still on my smoothie binge (my other favorites so far are this Banana Cashew Smoothie, which is also dairy free, and this Banana-Mango Smoothie). I love pineapple, and wanted a smoothie that would incorporate them in a simple, but wonderful way. I also had strawberries on hand so this is what I came up with! Isn’t it pretty?
This smoothie is so delicious and will cool you off and fill you up on those hot Summer (or Spring!) days.
1 cup pineapple
1/2-1 cup water (subtitute ice if you are using fresh strawberries)
A squeeze of honey (optional)
Place all ingredients into your blender, and blend on high until desired consistency is reached. You may need to adjust the amount of water/ ice cubes you add to get the consistency just right. If you use frozen strawberries, you will need almost a full cup of water to get the consistency to where it should be.
Yields 2- 8 ounce servings.
