This recipe for Double Chocolate Truffle Cookies is for serious chocolate dessert lovers! Dense, gooey, fudge-like cookies with chocolate chips baked right into them.
In the microwave on 50% power, melt unsweetened baking chocolate, semi-sweet chocolate chips, and the butter - stirring every 15-20 seconds - until smooth.
Set aside to cool.
In a large bowl, whip eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed.
Combine the flour, cocoa, baking powder and salt in a separate bowl; gradually stir into the chocolate mixture.
Fold in the bittersweet chocolate chips. Cover dough and chill for at least an 1-2 hours or overnight.
Preheat oven to 350 degrees F. Roll chilled dough into 1 inch balls (using cold hands works best as dough will be sticky). Place two inches apart on wax paper-lined cookie sheets (or use silicone baking mat).
