Creamy Red Pepper Cashew Dip

- 1¾ Cups Raw Cashews (soaked for at least 3 hours)
- ½ Red Bell Pepper
- 1 Cup Silk Cashew Milk (or other non-dairy milk)
- 2 Cloves of Garlic
- 1 Tablespoon fresh Lemon Juice
- 1 teaspoon Chili Powder
- ½ teaspoon Kosher Salt
- Soak the cashews in a bowl of water for at least 3 hours or overnight until they are soft. Drain well.
- Add all ingredients to a high speed blender such as a Blendtec or Vitamix or a food processor.
- Blend thoroughly.
- To serve the dip hot, heat in a sauce pan over medium low heat, stirring frequently so it doesn't burn.
- To serve the dip cold, serve right away.
- Serve with chips, pretzels, veggies, crackers, etc.
