Soup season is finally here!  I enjoy eating soup in all four seasons, but at least I feel as though it’s more acceptable to eat it during the fall and winter.  Mr. Wishes, on the other hand, strongly dislikes soup as he adamantly proclaims that he doesn’t like to eat any of his meals with a spoon.  Hey, more for me!  I will never understand you soup haters out there.  I mean, come on, the ultimate Bacon Cheeseburger Soup?!

This Crock Pot Sausage, Spinach & White Bean Soup is excellent, healthy, packed full of flavor, easy to make and very easy clean-up.  The crock pot does all of the work for you…have I sold you yet? It’s great for a work or holiday potluck because you can very easily cook it and then keep it warm all day right in the slow cooker.

I used Zweigle’s Italian chicken sausage in this soup.  Their all natural, gluten-free chicken sausage is the best and the quality cannot be beat!  I use it often as a great alternative to pork or beef sausage in any recipe that I’m making!  It’s definitely an easy way to make any meal a bit more healthy and lighter.  They have 5 different varieties (Spinach and Feta, Italian, Chorizo, Buffalo Style, Lime Chipotle), so no matter what you’re making, you have the perfect option.  Zweigle’s is a local brand here in Rochester, NY, but I am NOT at all biased, of course – it truly is the best tasting chicken sausage in all the land.

Crock Pot Sausage, Spinach & White Bean Soup is light, healthy, gluten free, and made right in your slow cooker. This is made with chicken sausage and is the perfect lunch or dinner for the cooler weather!
Ingredients
  • 1 tablespoon olive oil
  • 1 (12 ounce) package Zweigle's Italian Chicken Sausage, thinly sliced
  • 4 cloves garlic, minced
  • 1 yellow onion, diced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 (15-ounce) cans Great Northern beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 2 bay leaves
  • 4 cups chicken stock
  • Salt and freshly ground black pepper, to taste
  • 4 cups baby spinach
  • Shredded Parmesan cheese, for serving
Instructions
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Once hot, add sliced chicken sausage, and brown lightly on both sides to bring out the great flavor, stirring frequently, about 3-4 minutes.
  3. Place chicken sausage, garlic, onion, carrots, celery, beans, oregano, parsley and bay leaves into a 6-qt slow cooker/crock pot. Stir in chicken broth and 2 cups water until well combined; season with salt and pepper, to taste.
  4. Cover and cook on low heat for 6-7 hours or high heat for 3-4 hours. Stir in spinach until just wilted.
  5. Serve hot and top each serving with Parmesan cheese.
