Speaking of Super Bowl, what are your favorite appetizers to eat for the big game day?  Mine is the obvious – hot DIPS.  I’ve had the Rotel and Velveeta cheese dip a million times, and as much as I love that, I wanted something a little more substantial and creative (oh, and with real cheese!).  This version has cooked ground sausage, cream cheese, Colby Jack shredded cheese, and Rotel mixed right in.  It is so creamy and delicious.

The best part about this type of dip for a party appetizer is that you can leave it all right in the slow cooker and keep it warm all night – this way it stays creamy and perfect indefinitely.  Just throw a bowl of your favorite tortilla chips right next to the crock pot on the counter and people can dig right in.  The Scoops chips will work really well for this!  I couldn’t find any in the store the day I shopped for the ingredients for this Rotel dip or I would have definitely used those.  This dip is so easy to throw together.  The “hardest” part is browning the sausage beforehand and that takes less than 10 minutes to do.  This is great for more than just Super Bowl parties – I was thinking it would be a huge hit during the holidays or even a pot luck.  Who doesn’t love a good cheesy dip?

Crock Pot Sausage Rotel Dip + GIVEAWAY!

A cheese dip with cooked ground sausage made with minimal ingredients and warmed up right in the crock pot makes a great appetizer for football season, holidays, pot lucks, or tailgating parties!
Ingredients
  • 1 pound of ground pork sausage (like Jimmy Dean)
  • 2 (8 ounce) packages of cream cheese
  • 2 cans of RO*TEL diced tomatoes, undrained
  • 2 cups of Colby Jack cheese
Instructions
  1. Brown sausage in a skillet and drain; set aside. Add everything to the crockpot on LOW and and heat until cream cheese is melted and all is warmed through. This takes about 2 hours depending on how hot your crock pot cooks. Turn to WARM setting and keep warm throughout your party. Enjoy!
