I have a friend named Claire who has her own blog called Lemon Jelly Cake that I have been following for a long time now.  I saw this recipe that comes from one of her mother’s cookbooks on her site recently and knew immediately after seeing the photos of these gorgeous dinner rolls that I had to make them ASAP!  I have been on the hunt for a really good go-to dinner roll recipe for a while now and this one is it.  These dinner rolls takes a little bit of time to make because of the 1st and 2nd rising, but the results are so worth it!  The actual “hands on” work is practically nothing at all!

Mr. Wishes and I have a favorite Italian restaurant that we at at frequently here in Rochester called “Davincis”.  We eat there on almost every special occasion: birthdays, anniversaries, etc.  The food is fantastic there, but I have to say that one of the driving forces keeping us coming back is their dinner rolls.  This recipe I’m sharing today was pretty darn close to Davincis rolls which I am super excited about!  The texture was just what I was looking for in a dinner roll.  You will never want to go back to store bought rolls!

The best easy homemade dinner rolls I have ever made! This roll recipe came out perfectly fluffy and soft and would be a great side dish to accompany any meal. Serve these warm and straight out of the oven!
Ingredients
  • 1½ cups warm water (110-120 degrees Fahrenheit)
  • 1 tablespoon active dry yeast
  • 2 tablespoons white sugar
  • 2 tablespoons vegetable or canola oil
  • 1 teaspoon salt
  • 4 cups bread flour (use all purpose if you don't have bread flour, or a mixture of the two)
Instructions
  1. Mix yeast and sugar into warm water.
  2. Rest for 10 minutes, until the mixture is foamy and creamy.
  3. Add the oil, salt, and 2 cups of flour. Stir to combine.
  4. Add in the remaining flour, ½ cup at a time.
  5. Transfer dough to a floured surface and knead until smooth and elastic (about 8 minutes). You can also knead dough on low speed in the bowl of an electric mixer using a dough hook attachment.
  6. Grease a large bowl and place the dough in it, flipping once. Cover with a damp cloth.
  7. Let rise in a warm place for about one hour or until double in size.
  8. Punch the dough down after it has doubled in size.
  9. Divide and form into 16 round balls (make them as round as possible).
  10. Place on greased baking sheets, at least 2 inches apart.
  11. Cover with damp towel once again and let them rise again until doubled in size, about 30-40 minutes.
  12. Toward the end of the second rise, preheat oven to 400 degrees F.
  13. Bake in preheated oven for 18-20 minutes or until golden brown. Mine were perfect at 18. Serve warm with butter!
